2023 Pre-Order Deposit for 1/4, 1/2, or Full Beef

**IMPORTANT NOTE:

**Please note that we do not offer shipping for 1/4, 1/2, or whole animals. You must arrange to pick up your order from the ranch in Georgetown, Texas when it becomes available. There is no discount for ranch pickup on bulk beef.

With your $100 deposit, you are reserving a place in line to receive bulk beef.  The deposit is refundable up until the time you are scheduled for pickup.  If you don’t show, the deposit is nonrefundable.  We hope you understand the effort that goes into getting beef ready for you!

The availability of beef is dependent on a number of factors.  We have to have the right weather and conditions to achieve our quality of beef.  If we can’t produce the quality we are known for, then we don’t sell it.  So, please understand that your deposit is not a guarantee  of getting beef.  If we can’t get you beef, your deposit will be refunded.

We only process beef from January to May due to the cool season grasses we plant annually and which we have found to work so well.  We will reach out to all of the folks who have a deposit in the order in which we received it.  Starting in the spring, we will send out an email to schedule you for pick up, and will be scheduling pick ups two times a month on a Saturday.  This will continue until it is all sold, usually by mid June.  Before you come out to the ranch, we will get you a final weight of your beef so you will know your total invoice before you come.

Each animal ends up with slightly different final weights, but a quarter beef is about 100 to 120 pounds of beef.  A half animal is twice that, and so on.  For the cuts of beef to expect, packaging, and how buying beef in bulk works, please check out the “Bulk Beef” tab on the home page.

With your $100 deposit, you are reserving a quarter, half or whole animal, subject to availability.  You will get that portion of the cuts that the animal produced.  About 20 to 25% of the cuts will be grilling steaks, like tenderloin, ribeye, sirloin, NY Strip, etc.  About 30% will be briskets, roasts, ribs, etc.  About 30% will be our great ground beef that is so popular!  And the remainder will be round steak cutlets which are tenderized twice, meaty soup bones, osso bucco, bone broth bones, bone marrow bones, etc.  All of the cuts are better described under the “BULK BEEF” tab on the home page, and there are actual pictures of our beef there.

The beef is dry aged for 21 days and then processed into vacuum sealed and labelled packages with the USDA inspection stamp, ready for your freezer.  It can last for 2 or more years in your freezer as long as the package is not punctured and it is kept frozen.  It is an excellent way to stock up on beef for the year.  It is much cheaper to buy in bulk than going to the store or farmer’s market and buying beef periodically all year.  For the last two years, we have seen about 80% of our orders going to repeat customers, and have been totally reserved out by mid Fall.  SO DON’T WAIT!

The animals will go onto our special, annual grasses in January and, if you have a reservation, we will be reaching out to you for pick up here at the ranch starting in the Spring of 2023.  We haven’t completed the prep for the finishing program and we therefore have not incurred all of the costs at this point.  We won’t know how much irrigation is needed depending on rain, etc.  SO, WE DO NOT HAVE OUR PRICING SET FOR 2023.  Don’t worry, if you are not happy with the pricing in 2023, we will happily return your deposit — no worries.  We hope to keep our pricing the same or close to 2022, which was 11 for a whole, 12 for a half, and 13 a pound for a finished quarter beef.

IF THE WEB SITE SAYS WE ARE “OUT” THEN THAT MEANS YOU MISSED OUT ON RESERVING BEEF.  SO SORRY!  BUT WE WILL OPEN UP THE WAIT LIST AND YOU CAN GET ON THAT IN CASE SOMEONE CANCELS THEIR ORDER AHEAD OF YOU.  THERE WERE SOME CANCELLATIONS LAST SPRING DUE TO FOLKS MOVING, DIVORCE, LOST JOB, ETC.  SO, IT CAN HAPPEN!
